Here is a great recipe from one of our members. Thanks Cheryll!
4 c. Cooked (or leftover) jasmine rice (I freeze leftover rice to use in stir fry)
2 eggs scrambled and diced
2 TBSP oil, divided
2 c. shrimp, chicken or pork (leftover or cooked)
1 c. thinly sliced mushrooms (optional)
2 c. bok choi chopped in large pieces [Editor’s Note: Only 2 cups?]
1 onion cut into strips
4 TBSP oyster sauce
1/2 tsp minced garlic [Editors note: How about green garlic or garlic scapes?]
1/2 tsp powdered ginger
1/2 tsp pepper
1/4 tsp cayenne
3 green onions cut diagonally
1/2 c. pineapple
1/3 c. cashews
Heat wok with oil over high heat.
Add meat, mushrooms, onion, bok choi & oyster sauce.
Add garlic, ginger,pepper & cayenne.
Stir fry for 4 min., stirring constantly.
Add rice and cook 4 more minutes.
Add green onions, pineapple, cashews.
Cook 1 minute.
Serve hot.
