Garlic scapes are so special that sometimes they deserve the lead role.  This simple dish is great for anyone wanting to accentuate the delicious flavor of the garlic scape.

1 tablespoon butter
1 tablespoon olive oil
12 garlic scapes
1/4 cup red onion, chopped
1 tablespoon balsamic vinegar (red or white, depending on your preference)

Cut and discard the scape tips [Editors Note: the very tip of the scape, not the cool cone shaped part] and cut remainder in 2″ pieces.
Heat olive oil and butter in a skillet over medium heat.
Add garlic scapes and onion and saute for about 5 minutes, or until tender and crisp.
Season with salt and pepper and the balsamic vinegar.
